Directions
Cook the bacon in a large skillet over medium-high heat. Turn it every now and then until it’s nice and crispy, which should take about 10 minutes. Once it’s done, transfer the bacon to a paper towel to soak up any extra grease. Next, spread a tablespoon of pesto on the bottom slice of your toast. Layer on some fresh tomato slices, then add three pieces of the cooked bacon. Sprinkle a little salt and pepper over the top to bring out the flavors. On the other slice of bread, spread a teaspoon of mayonnaise, then place it mayo-side down on the sandwich. Finally, cut the sandwich in half and you’re ready to dig in!
