Step 1
Warm your grill to medium-high and lightly oil the grates so the burgers don’t stick. Season the ground buffalo with salt and pepper, then divide it into 8 equal balls. Use your thumb to make a deep well in the center of each ball, about halfway through. Fill each well with a tablespoon of blue cheese, then carefully seal the meat around the cheese and gently press the balls into burger patties.
Step 2
Place the patties on the grill and cook them for about 4 to 6 minutes on each side, or until they’re cooked through to your liking. If you have a meat thermometer, the internal temperature should reach 160°F (70°C). While the burgers are cooking, toast your buns and spread a little mayonnaise on the cut sides.
Step 3
Assemble the burgers by placing each patty on the bottom bun, then add a leaf of lettuce, some onion rings, and a slice of tomato. Top everything with the bun and enjoy!
