Directions
Combine the mayonnaise and Cajun seasoning together in a small bowl until it’s nice and smooth. Spread this flavorful mayo on both slices of toasted bread. Next, place the andouille sausage slices cut-side down in a skillet over medium-high heat. Let them cook for about 2 minutes, then flip and cook for another 2 minutes until they’re nicely browned. Move the sausage onto one slice of the bread, leaving a little gap between the halves—that way, the egg has a cozy spot to sit. In the same skillet, add a bit of oil and heat it over medium for about a minute. Crack an egg into the pan and let it cook undisturbed for 3 minutes. Flip it carefully and cook for another 2 minutes until it’s done to your liking. Finally, place the fried egg on top of the sausage, then sandwich it with the other slice of bread. Enjoy!
