Why You'll Want This Again
Cooking Tips You Should Know
- Let the bars cool completely before cutting to avoid crumbling.
- Use a sharp knife and wipe it clean between cuts for neat bars.
Step 1
Soak the almonds in 2 cups of water with a pinch of salt. Let them sit for at least 8 hours or overnight. Once they’re soaked, drain and rinse the almonds a couple of times.
Step 2
Toss the drained almonds into a blender with 2 cups of fresh water and blend until completely smooth, which should take about 2 minutes. Pour this almond mixture into a large bowl.
Step 3
Preheat your oven to 350°F (175°C) and lightly grease an 11x15-inch baking dish with cooking spray.
Step 4
Now, mix in the flour, chocolate chips, olive oil, chia seeds, honey, powdered peanut butter, cinnamon, vanilla extract, and 2 teaspoons of salt into the almond mixture. Stir everything together until it forms an even dough.
Step 5
Spread the dough evenly into the prepared baking dish, smoothing the top with a spatula or fork.
Step 6
Bake for 30 to 40 minutes, until the bars are set and have a nice golden color around the edges. Let them cool for about 10 minutes before slicing into bars and enjoying.
