What Makes This Dish So Tasty
Kitchen Tips
- Use cream cheese with chives or herbs for extra flavor inside the jalapeno poppers.
- Cook on medium heat to allow the bacon to crisp without burning before the chicken is fully cooked.
Step 1
Lightly heat your oven to 400°F (200°C). In a bowl, mix together the cream cheese, shredded Cheddar, chopped jalapeños, garlic powder, and barbecue seasoning until everything is well combined. Carefully cut a pocket into each chicken breast—try not to slice all the way through. Stuff each pocket with the cream cheese mixture, then wrap the chicken breasts tightly with three slices of bacon each.
Step 2
Set a baking rack over a baking sheet and place the stuffed chicken on top so the heat can circulate around them. Pop them in the oven and bake for about 40 minutes, or until the chicken is cooked through and the bacon is crispy. You can check by making sure the center reads 165°F (74°C) on a meat thermometer. Let the chicken rest for a few minutes before serving to keep it juicy.
