Step 1
Preheat your oven to 375°F and lightly spray a baking sheet with cooking spray. Next, heat some vegetable oil in a deep pot or fryer until it reaches 375°F. While the oil heats up, rinse your wings and pat them completely dry with paper towels. Fry the wings in batches of five or six for about 10 minutes, just until they’re partially cooked. Drain them on paper towels and let them cool down a bit.

Once they’ve cooled, pop the wings back into the hot oil and fry them again until they turn a beautiful golden brown—this should take around 6 to 8 minutes per batch. After frying, drain them on paper towels again. Toss the wings in a big bowl with your hot wing sauce, making sure each piece is nicely coated. Arrange the wings in a single layer on your prepared baking sheet and brush any leftover sauce on top.

Step 3
Finally, bake the wings in your preheated oven for about 15 minutes, or until the sauce has mostly dried up and the skin feels a bit crispy. Serve them up on a platter with some carrot and celery sticks, plus a side of blue cheese dressing for dipping. Enjoy!
