Directions
Lightly heat your oven to 325°F (165°C) and line a couple of baking sheets with parchment paper or a silicone mat to keep the cookies from sticking. In a large bowl, cream together the sugar and coconut oil until the mixture is light and fluffy. Then, beat in the egg and vanilla until everything is well combined. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing just until it comes together. Fold in the chocolate chips and coconut flakes so they’re evenly spread throughout the dough. Scoop out the dough by the tablespoonful onto your prepared sheets, making sure to leave about an inch and a half between each one. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
