Step 1
Gently heat your oven to 350°F (175°C) and lightly grease a shallow baking dish with some cooking spray. Pat the tilapia fillets dry with paper towels to help the coating stick better. In a zip-top bag, combine the bread crumbs, seasoning, salt, and cayenne pepper. Give the bag a good shake to mix everything together.

In a separate bowl, whisk the milk and egg until smooth. Dip each fillet into the egg mixture, letting any extra drip off, then pop it into the bag with the bread crumb mix. Seal the bag and shake gently to coat the fish evenly.
Step 3
Place the coated fillets in the prepared dish and bake them for about 15 minutes, or until the fish flakes easily with a fork. For an extra crispy finish, switch your oven to broil and cook the fish for another 5 minutes, keeping a close eye so they don’t burn. Enjoy!
