- Cupcakes:
- 4 ounces fully cooked luncheon meat (such as SPAM®), grated
- 1 (15.25 ounce) package devil's food cake mix
- 1 ⅓ cups water
- 1 cup mayonnaise
- 2 large eggs
- Frosting:
- ½ cup butter
- 1 cup dark brown sugar
- ¼ teaspoon salt
- 2 cups confectioners' sugar, or as needed

Step 1
Heat your oven to 350°F and either grease a 24-cup muffin tin or line it with paper liners. Next, warm up a large skillet over medium-high heat and cook the grated SPAM® until it’s nicely browned and crispy, which should take about 5 to 7 minutes. Once done, transfer it to a paper towel-lined plate to cool off.

Step 2
In a big bowl, mix together the cake mix, water, mayonnaise, and eggs using an electric mixer on low speed until everything is just combined. Then crank the speed up to medium and beat the batter until it’s nice and smooth, about 2 minutes. Gently fold in two-thirds of the crispy SPAM®.

Step 3
Spoon the batter into your prepared muffin cups and pop them in the oven. Bake for around 20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the pans on a wire rack until they’re completely cool.

Step 4
While the cupcakes are cooling, melt butter in a small saucepan over medium heat. Stir in the brown sugar and heavy cream until the sugar dissolves, then let it simmer without stirring for about a minute. Take it off the heat, mix in the salt, and let the sauce cool completely.

Step 5
Once the caramel sauce has cooled, transfer it to a large bowl and gradually beat in the powdered sugar, adding it a cup at a time, until the frosting is thick enough to spread. Finally, frost your cupcakes and sprinkle the remaining crispy SPAM® on top for a salty, sweet finish.
