Step 1
Place the chicken breasts in a pot and covering them with about an inch of water. Bring the water to a boil, then lower the heat and let it simmer, covered, until the chicken is cooked through—this usually takes around 10 to 14 minutes. You can check by cutting into the thickest part or using a thermometer; it should read 165°F.

Once the chicken is done, drain it and let it cool for a few minutes until you can handle it comfortably. Cut the chicken into small cubes, then pop them into a blender and pulse until it’s a chunky, scoopable texture.

Lay out the wonton wrappers on a clean surface. Spread about a teaspoon of tzatziki sauce in the center of each wrapper, then add a teaspoon of the chicken mixture and a teaspoon of feta cheese on top. Fold the wrappers over to create little pockets and press the edges firmly to seal them.

In a small bowl, whisk together an egg and a splash of water, then brush this mixture over the tops of the wontons to help them brown nicely.
