Ingredients
- 3 tablespoons olive oil, divided
- ½ cup garlic- and herb-seasoned panko bread crumbs
- 2 cloves fresh garlic, finely chopped
- 1 lemon, zested
- 1 ½ teaspoons seafood seasoning (such as Old Bay®)
- 1 teaspoon salt, divided
- 4 (5 ounce) mahi mahi fillets

Step 1
Warm a large pan over medium heat for a couple of minutes. Pour in 2 tablespoons of oil, then add the panko breadcrumbs. Stir them around and cook until they’re lightly toasted, about 2 to 3 minutes. Toss in the garlic and keep cooking until you can smell that lovely garlic aroma and the breadcrumbs turn golden brown, which should take another minute or two.

Step 2
Once toasted, transfer the breadcrumb mixture to a small bowl. Stir in the lemon zest, seafood seasoning, and 1/4 teaspoon of salt, then set it aside for now.

Step 3
Wipe the pan clean and add the remaining oil. Season the mahi mahi fillets with the rest of the salt, then place them in the pan. Let them cook over medium heat until they turn opaque, about 2 to 3 minutes on each side. To be sure they’re done, check that the thickest part reads 145°F on an instant-read thermometer.
