Ingredients
- 12 ounces pork sausage patties
- cooking spray
- 5 eggs
- ½ teaspoon adobo seasoning
- ½ cup shredded Muenster cheese
- 5 multi-grain sandwich rolls (such as SandwichThins®)
Why This Dish Is Hard To Resist
Cooking Pointers
- Cook eggs on medium-low heat to avoid rubbery texture.
- Add a slice of cheese while the egg is still hot to melt it perfectly.
Step 1
Flatten each sausage patty between two sheets of wax paper—if you have a tortilla press, it works great for this. Pop them in the freezer for about 30 minutes until they’re firm but not frozen solid. Next, heat a lightly greased skillet over medium-high heat and cook the patties for 2 to 3 minutes on each side until they’re nicely browned. Once cooked, transfer them to a rack set over a foil-lined pan so any extra grease can drip off, then wipe out the skillet.
Step 2
In a bowl, beat the eggs with the adobo seasoning until the mixture is light and a bit frothy. Spray an egg ring with cooking spray and set it in the skillet. Pour in some of the egg mixture and cook until the edges are set, about 2 to 3 minutes. Take off the ring, flip the egg, and cook for another 2 to 4 minutes until it’s fully cooked through. Repeat this until you’ve made five egg rounds.
Step 3
Now, split your sandwich rolls and layer each bottom half with a sausage patty, one of the cooked eggs, and a slice of Muenster cheese. Top with the other half of the roll, then wrap each sandwich tightly in wax paper and aluminum foil. Pop them in the freezer, and when you’re ready, just reheat and enjoy a quick, delicious breakfast!
