What Makes This Recipe Special
Simple Cooking Tips
- Use a variety of colorful vegetables to add both flavor and nutrients.
- Toast the sesame seeds before adding for an extra nutty aroma.
Step 1
Bring a large pot of lightly salted water to a boil. Once it’s bubbling, add the soba noodles and cook them uncovered for about 7 minutes, stirring now and then, until they’re tender but still have a bit of bite. Drain the noodles and set them aside.
Step 2
While the noodles are cooking, mix together the soy sauce, oyster sauce, and mirin in a small bowl and keep it nearby.
Step 3
Heat some olive oil in a skillet over medium-high heat, then toss in the bell pepper, onion, and green beans. Sauté them just until they’re softened but still have a little crunch, about 2 to 3 minutes.
Step 4
Add the cooked soba noodles to the veggies and give everything a good toss. Pour in the sauce mixture and stir it all around for another minute or two so the flavors blend nicely.
Step 5
Finally, throw in the baby spinach and cook just until it wilts to your liking, which should take about 2 to 3 minutes. Serve it up in a bowl and enjoy!
