- 2 ripe avocados, halved and pitted
- ½ small onion, minced
- 1 tablespoon fresh lime juice
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons chopped fresh cilantro
- 1 clove garlic, minced

- 1 Roma tomato, finely chopped
- 4 slices Texas toast
- 4 slices Havarti cheese
- 2 teaspoons butter, or to taste

Step 1
Mash the avocados in a big bowl. Add the chopped onion, lime juice, jalapeno, cilantro, garlic, salt, and pepper, then mix everything together until it’s well combined. Gently fold in the tomato to keep things nice and chunky.

Spread as much guacamole as you like onto two slices of bread, then layer two slices of Havarti cheese on top of each. Place the remaining bread slices on top and butter the outsides of the sandwiches.
